Fish Tacos! Blackened Mahi-Mahi

What is more fun than Taco Tuesday?!  Once you make homemade fish tacos with fresh salsas you will never go back.  We keep a couple of packages of Trader Joe's frozen mahi mahi in the freezer to have on hand. Thaw frozen fillets overnight in the refrigerator on top of paper towels to absorb water.  A table full of fresh salsas and slaw compliment the fish and make it a feast.  All of our salsa recipes will follow.

Ingredients:

  • 4 mahi mahi fillets
  • 2t chopped onion flakes
  • 2t chili powder
  • 1t garlic powder
  • 1t cumin
  • 1/2 t salt
  • 1/2 t pepper
  • 3t fresh lime juice
  • 3t The Furies EVOO

Instructions:

  • Dry fish fillets with paper towels to remove excess water
  • Mix together spices and dried onions.  Add lime juice and EVOO to make a paste
  • Using your hands, rub spice paste onto both sides of fish and set aside for 5 minutes
  • Heat cast iron skillet or grill pan with a coating of EVOO to medium heat.  Add fish and cook 3-4 minutes and flip.  Cook second side of 3-4 minutes until fish is opaque and tender.
